A few years back I had never heard of enchiladas, found a recipe and thought, "what the heck". I made them and they were soooo YUMMY!

I used 4 boneless lion chops. Chicken Fried Steak, there are dozens of versions and I'll just have to try them all until I can relive that one night in small town USA.
This version is from Food Network Sunday's menu is looking something like this.... Now some of you purist may prefer you steak naked, a little salt, a little pepper and that's it. I like that too but other times I like the flavour a great marinade can give. This marinade also helps tenderize ever so slightly.
I started with these, 2.49kg = approximately 5.5lbs It's the season and they are out in abundance, the DANDELION!
I have to admit that I'm a hypocrite. I love fields of these little yellow beauties, I admire sheets of yellow along the roadside, I think they are pretty... BUT...and it's a big BUT...I don't like them on my lawn! Yeah, that's what I'm talkin' about! With my generous gift from Tre Stelle, I was off to get some cheese!
